A mushrooms with the traditional 'mushroom' shape, the pioppino has a golden brown cap that can reach the size of a sand dollar and long stems. Pioppinos have a veil under the cap that detaches as it grows and forms a little skirt around the stem near the gills. The caps and stems have a delightful meat and potato like flavor. The stems snap like asparagus when fresh, and take on a french fry texture when fried.
